Full Circle Lemon Chicken Kabobs

  • ¼ cup freshly squeezed lemon juice
  • ¼ cup Full Circle Extra Virgin Olive Oil
  • ½ teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 pound chicken, cut into pieces
  • Grape tomatoes
  • Bell pepper, cut into chunks
  • Lemons, cut into wedges
  • Wooden skewers, soaked in water

Serves 6

In a medium bowl, whisk together lemon juice, olive oil and spices. Add chicken, cover and marinate at least 2 hours, or overnight. Thread chicken, lemons and vegetables onto skewers. Grill or broil 5 to 10 minutes, turning once until chicken is thoroughly cooked.
