Marinated Full Circle Salmon Steaks with Mango Relish
- 4 Full Circle Salmon Steaks
- ½ cup Full Circle Orange Juice
- ¼ cup Full Circle Balsamic Vinegar
- 1/3 cup Full Circle Extra Virgin Olive Oil
- Salt and pepper, to taste
- 2 tablespoons basil, chopped
- 1 mango, diced
- 1 red pepper, diced
- ½ cup red onion, diced
Serves 4
Thaw salmon; rinse and pat dry; place in a shallow dish and set aside. In a small bowl, whisk together orange juice, vinegar, olive oil, salt and pepper, and basil; measure ¼ cup marinade and set aside. Pour remaining marinade over salmon steaks; cover and marinate in refrigerator for 30 minutes, turning once. To make mango relish, combine mango, red pepper, onion, and reserved marinade; set aside. Discard salmon marinade. Broil or grill salmon steaks according to package directions. Serve warm with mango relish on top.
