Full Circle Quesadillas

  • 8 large flour tortillas
  • 4 cups grated cheese (Chihuahua, Cojack, Monterey Jack), divided
  • 4 tablespoons Full Circle butter, divided

Serves 4 to 6 as an appetizer

In a non-stick skillet, over medium heat, melt 1 tablespoon butter. Place one tortilla in skillet and sprinkle with 1 cup cheese. Cover with another tortilla and press down. When cheese is beginning to melt and tortilla is starting to brown, carefully turn quesadilla over. Continue heating until cheese is melted. Remove to a cutting board and cut into 6 to 8 triangles. Repeat with remaining tortillas and cheese. Serve immediately with guacamole and salsa, if desired.
