BILL & LEAH TELEPAN’S MIXED BEET SALAD WITH FRESH BUTTERMILK & CHIVE DRESSING

SERVES 4 APPETIZER PORTIONS

  1. Preheat oven to 450ºF.
  2. Place beets in foil with olive oil and 4 tablespoons water. Sprinkle beets with salt.
  3. Fold the foil to seal in beets. Place beets in the oven, on a baking sheet (to catch any juices or water that escapes).
  4. Roast until tender and easily pierced with a knife, about 25 to 30 minutes. Set aside to cool.
  5. Thinly slice chives. Mix together all of the ingredients for the buttermilk dressing.
  6. When beets are cool peel by rubbing them with a towel and slice in half. Place beets on plate and drizzle with dressing.
  7. Garnish with additional greens or herbs. Serve immediately.
  8. Enjoy!

Chioggia or candy-striped beets have brightly colored stripes that make them appear whimsical and as tempting as candy. The bright colors are perfect for tempting kids! And they make a beautiful presentation for parties.

This recipe is easy for the kids to make: use kid-safe scissors to cut the chives, let them mix the dressing with a small wisk or fork, and peel the cooled beets by hand.

For added fun, let the kids plate the salad themselves, and get creative with the presentation: maker the beets appear as artwork, drizzle the dressing in fun patters, top with herbs or greens.

4 Bunches Fresh Baby Beets, trimmed
* use Chioggia, golden, red, striped,
or other beets that are in season.
2 tablespoons olive oil

FOR THE DRESSING:
2 Ounces Buttermilk
2 Tablespoons Lemon Juice
2 Tablespoons Sliced, Fresh Chives

FOR THE GARNISH:
2 Tablespoons Extra-Virgin Olive Oil**
Kosher Salt

Seek out farm fresh milk at your local farmers market or grocery store. Fresh milk products have a satisfying taste that is especially accentuated in simple recipes like this. And, farm fresh dairy products are generally filled with more vitamins and nutrients than ultra pasteurized or commodity dairy products.

Instead of buttermilk, you can substitute fresh, plain yogurt. The results are just as delicious and a bit easier for the kids to dive into.
